- 1 medium zucchini
- 1/2 cup corn kernels, canned
- 1/2 small brown onion
- 1/2 cup flour rice
- 1/4 tsp baking powder
- 3 large eggs
- 1/2 tsp cumin seeds
- 1 tsp extra virgin olive oil
- 2 slices avocado

Mix eggs with water and add in dry ingredients and mix until batter consistency forms. Mix through zucchini and corn. Heat oil in pan and add spoon full into pan cooked each side until browned.
