- 1/2 cup four bean mix
- 80g lean beef mince
- 1 tsp taco seasoning
- 1 spray of extra virgin olive oil
- 2 tbsp canned tomatoes
- 1 large egg
- 2 raw onion rings
- 2 slice avocado
- 1 sprinkle cheddar cheese

Once onion cooked add in mince and cook until browned. Add in beans, tomatoes and taco seasoning and cook for 2-3 minutes. Make 5 holes in mince and crack eggs into holes. Simmer covered for 5-10 minutes or until eggs are cooked. While waiting for eggs to cook, use spray oil and cook each side of tortilla for 1-2 minutes or until browned.
