Mexican Tofu Bowl

  • 200g tofu
  • 80g black beans
  • 1/4 cup corn kernels
  • 1 tsp taco seasoning
  • 2 raw onion rings
  • 1 small red chilli
  • 1/4 clove garlic
  • 1 slice avocado
  • 2/3 cup brown rice

Cook rice as per packet instructions. Cook garlic and tofu in frypan for 3-4 minutes each side or until cooked and crispy. Serve with beans and salad, squeeze lemon juice over the top.[/vc_column_text][/vc_column][/vc_row]
