  • 8 large eggs
  • 1 cup mushrooms, chopped
  • 200g pumpkin, steamed
  • 300g sweet potato, steamed
  • 1 small capsicum
  • 250g low fat cottage cheese
  • 150g low fat feta cheese
  • 30g pine nuts
  • 1 tbsp olive oil
  • Serve with unlimited salad vegetables

Mix all ingredients in a bowl and pour into lightly sprayed baking dish. Sprinkle salt and pepper on top and bake for 30 minutes or until cooked through.
