Tofu Scramble

  • 200g firm tofu
  • 1 ½ tsp olive oil
  • 2 slices onion
  • 1 sprinkle tumeric
  • 1 sprinkle cumin
  • ⅓ tomato
  • 4 medium mushrooms
  • ¼ medium zucchini, grated
  • 2 slices bread, white, wholemeal, grain or sourdough
  • 60g avocado
  • 2 slices cheese

Chop vegetables and cook in pan with olive oil. While vegetables cook use fork to break tofu apart into small pieces. Add tofu to pan with vegetables and spices and cook for 5-8 minutes or until tofu is slightly brown. Serve with toast, avocado and cheese.[/vc_column_text][/vc_column][/vc_row]
