Vegetable Frittata

  • 6 eggs
  • 3 zucchini, grated
  • 300g sweet potato, grated
  • 250g reduced fat feta, cumbled
  • 250g reduced fat ricotta
  • 2 cups broccoli, chopped
  • 1 cup self raising flour
  • 2 tbsp chives, chopped
  • Serve with unlimited salad vegetables

Grate zucchini and sweet potato into large bowl and add chopped broccoli. Crumble feta and add to bowl along with ricotta and chives. In a separate bowl, whisk eggs and mix through flour until smooth. Add to bowl of vegetables and cheese. Place in oven and cook for 25mins or until cooked through.
