  • 3/4 cup four bean mix
  • 120g lean beef mince
  • 1 tsp taco seasoning
  • 1 spray of extra virgin olive oil
  • 2 tbsp canned tomatoes
  • 1 large egg
  • 2 raw onion rings
  • 1/2 medium avocado
  • 1 sprinkle cheddar cheese
  • 1 mini tortilla

Once onion cooked add in mince and cook until browned. Add in beans, tomatoes and taco seasoning and cook for 2-3 minutes. Make 5 holes in mince and crack eggs into holes. Simmer covered for 5-10 minutes or until eggs are cooked. While waiting for eggs to cook, use spray oil and cook each side of tortilla for 1-2 minutes or until browned. Serve mince with tortillas sour cream and avocado[/vc_column_text][/vc_column][/vc_row]
